Hi since my outdoor cameras will be fitted with junction boxes and the wiring protected in conduit is cat5e ethernet cable suitable to use for Hikvision 4k cameras or should i go for cat6 cable. I also notice cat6 seems to be capable of larger bandwidths is this better for future proofing my set up?

cat5e is adequate, but cat6 IS better for future proofing as you correctly say.
The price differential is quite small nowadays, so people do typically use cat6 as the cost of the cable is relatively low in comparison to the labour.
